Ingredients:

1 leftover cooked ham bone

Any vegetables in fridge eg.

2 stalks celery large chopped

2 onions large chopped

2 carrots large chopped

2 cloves Garlic chopped fine

2 large Tomatoes chopped large

2 cans cooked navy beans or raw beans ( soaked and cooked)

Use three herbs or spices from your selection. Basil Oregano, nutmeg. Be adventurous.

8 cups water

1/8 cup hot sauce

Roasted garlic and pepper seasoning.

Ingredients for making fajita

1 cup feta cheese or any leftover cheese you have

8  12 inch flour tortilla

 

Preparation

In large pot add all ingredients and bring to boil. Reduce heat and cook for 4 hours on low heat or 8 hours in a crock pot. 

Stir all ingredients in pot before preparing fajitas.

Place a small amount of cheese on flour tortilla.

Using a large spoon remove a large portion of soup trying to remove as much juice as possible. Add soup ingredients on top of cheese.

Roll and eat. Serves 8.
