Serves two

Ingredients:

12 oz. boneless chicken breast cut into 1 inch cubes

1 red pepper cut into 1 inch pieces

½ onion cut into 1 inch pieces

2 stalks celery cut diagonal

2 tbsp. oil

½ tsp. roasted garlic and peppers

1 cup chicken stock

1 tsp. cornstarch (¼ cup cold water) mix together

 

Preparation

In frying pan on medium heat add oil.

Add chicken and cook for 4 minutes and remove.

Add vegetables and cook for 3 minutes.

Add chicken to vegetables and cook for two minutes.

Add roasted garlic and peppers

Add chicken stock a simmer for two minutes

Add cornstarch and water.

bring to boil and serve.
